I'd Laksa More, Thank You! (Yummy Curry Soup)

Laksa is a wonderful coconut milk based noodle soup that hails from Malaysia. These days you can get commercial laksa or other Thai curry pastes that take all the hard work out of it. 


This is a really easy coconut curry dish we threw together the other night.  It's one of those meals that tastes awesome even with the labels of "gluten free" and "vegan."  We adapted the recipe originally posted by Zen Family Habits to make it gluten free, tame the heat and feed six people:
 

1 lb of thin rice noodles
2 tbs Thai curry paste (to taste)
1 large can (1 1/2 cups) coconut cream
1 can coconut milk
3 cups mixed chopped vegetables (we used red and yellow peppers and kale)
1 package of extra firm tofu (sliiced like domino pieces)
handful fresh basil leaves (optional)

Place noodles in a heatproof bowl and cover with boiling water. Allow to stand for 1 minute then massage to loosen into individual strands. Drain.
Meanwhile heat 2 tablespoons of coconut oil in a large saucepan over medium heat. Lay tofu  slices in even layer in pan, let fry for three minutes on each side until golden.  Set tofu aside and increase heat to high.  Add curry paste and stir fry for 30 seconds. Quickly add coconut cream and coconut milk and 2 cups boiling water. Bring to boil and add vegetables. Simmer for 2 minutes or until vegetables are cooked to your liking.  Add tofu to soup.

To serve, divide noodles between 6 bowls. Pour soup and vegetables to cover and top with basil leaves.


That's it!  

Now, how to make this meal practical for a sixth month old to eat?...

I know with Baby-Led Weaning (BLW), we could have tried giving Goose a bowl of the soup and let her figure out how to get it into her mouth.  But the consistency was tricky - thin soup with large chunky veggies.  I opted to use our Green Sprouts food mill to grind a few ounces of the soup into a mash. 


She didn't mind the heat of the curry, but had her doubts about the texture.  
So next time we make this dish, I'll just grind the tofu, veggies and sauce and skip the noodles.
