Is there anyone out there that doesn't love the flavor of key lime? Yeah, I didn't figure. So for ALL OF HUMANITY: here's a really easy protein-packed dessert you can throw together in a flash with basic ingredients:
EASY GF/DF KEY LIME PUDDING:
1 package of Silken tofu
4 frozen bananas
10 key limes, juiced (approx 1/3 cup)
2 TBS agave nectar
shredded coconut to garnish
Throw everything but the shredded coconut into a food processor or blender until smooth. Tinker with the agave if you want it sweeter. Top with the coconut for funzies. Serves 4. Refrigerate to keep firm.
