Easy GF/DF Key Lime Pudding

Is there anyone out there that doesn't love the flavor of key lime? Yeah, I didn't figure.  So for ALL OF HUMANITY: here's a really easy protein-packed dessert you can throw together in a flash with basic ingredients:
 

EASY GF/DF KEY LIME PUDDING:

INGREDIENTS:
1 package of Silken tofu
4 frozen bananas
10 key limes, juiced (approx 1/3 cup)
2 TBS agave nectar
shredded coconut to garnish

DIRECTIONS:
Throw everything but the shredded coconut into a food processor or blender until smooth.  Tinker with the agave if you want it sweeter.  Top with the coconut for funzies.  Serves 4.  Refrigerate to keep firm.

  2. It depends. Sometimes I throw them right into my Omega Big Mouth centrifugal juicer if I'm adding it to a juice blend, but most often (if I'm using them for a dessert, etc) I just cut them in half and squeeze them by hand. Since they are so small, I can hand squeeze two at a time, so the process is quick. If you don't have one, I recommend one of these gizmos:
